{Oatmeal, Cranberry, Walnut Cookies}



This recipe I found on the back of my Crisco 3pk container...I tried it out and low and behold it was a good recipe that wasn't too hard to make and I had everything needed in my pantry already! Gotta love that! They turned out chewy and yummy and they must be super healthy since they have walnuts and dried cranberries and oatmeal, RIGHT?


CRANBERRY WALNUT OATMEAL COOKIES

Ingredients:

3/4 cup all vegetable shortning
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs
2 tsp vanilla extract
1 cup all purpose flour
1 tsp. baking soda
1 tsp ground cinnamon
1/4 tsp salt
2 3/4 cup rolled oats
1 cup dried cranberries
1 cup chopped walnuts

Directions:

Heat oven to 375°F. lightly coat a baking sheet with non-stick cooking spray. 

Beat shortning, sugar and brown sugar in a large bowl until creamy. Beat in eggs and vanilla.

Combine flour, baking soda, cinnamon and salt into a bowl. Beat the dry mixture into the wet ingredients. Add in the oats, dried cranberries and walnuts. 

Drop by rounded spoonfuls onto baking sheet and cook for 10-12 min. until light brown. Cool on baking sheet 1-2 min then transfer to a cooling rack to cool completely.

Makes 3 dozen cookies (depending on your scooping method)
