{Refrigerator Pickles}

So I had some cucumbers left over from when I went to a little farm market in Fruitland and wanted to pickle them and got this recipe off the internet and then tweaked it for what I actually had in my cupboard.

I made them up and let them sit in my fridge for 24 hours and I must say they are yummy!! It was super easy and can be tweaked to fit items in your fridge and it's not too sweet, I was surprised at how mild it was and how the vinegar didn't over power the onion or cucumber. It was a nice pickle flavor with just a hint of sweetness...

This made 3 quart size jars for me

Homemade Refrigerator Pickles

Ingredients:

1 Cup distilled white vinegar
1 Tablespoon salt
2 Cups white sugar
6 - 7 cucumbers sliced (any way you want)
1 large Onion sliced

Directions:

In a medium sauce pan over medium heat bring the first 3 ingredients to a boil until the sugar and salt has dissolved.

Place cucumbers and onion into a large bowl. Pour the liquid over them and toss. Transfer to a sterile container pouring liquid over top. Store in the fridge for up to 2 months.

You can add peppers, any type of onion (I used a sweet walla walla onion), mushrooms and any other seasonings you would like. I am impressed with how these came out!

I have a vacuum sealer that came with a wide mouth lid sealer and used it to vacuum out the air and seal the lid. I can see using these pickles on sandwiches, hot dogs, hamburgers, salads and many other yummy foods.

{Taking a Nap}

I am loving nap times now that the older kids are in school! It's so quiet that not only can we get MJ to take her nap but it's quiet enough that hubby and I can take one too...Here is a quick snap of Hubby with MJ during Nap time...

{Sleepy Kitty}

Toby, our male cat, loves to be near me and has now taken over the little cubby space of my dresser converted into a secretary desk (it's where I put my key board and mouse when the "desk" is put up). It really is cute but makes it hard to put away my things so the kids don't mess with stuff...but really how can I wake him when he's all curled up and asleep?

Ignore the mess of papers and my very dirty keyboard....

{First Day of School}

{2011}

And so the first day of school has crept up on us! Can you believe we are over half way thru the year already!! I know I was going to try to homeschool but we found a good school when we moved into our home and the kids love it so that's where they are going to stay...

Aaron is now a 4th grader, Sam is a 2nd grader and Ruth is now in Kindergarden!! I can't believe how quickly they grow up!

**As a side note MJ is officially 10 months now!! When did that happen??**

My boys look like little Thugs *sigh*

Notice the skull theme - Ruth has rhinestone skulls on her back pockets of her jeans too

{Last Scout meeting of the Summer}

Before leaving for scouts I snapped a few pictures of MJ playing in a laundry basket, she just loves the basket!

We had our last pack meeting of the summer the week before the kids started school. They got to race their boats and it was soo cool to see everyone's boat and how they decorated them. Aaron and Sam decorated theirs with marker and of course when they raced 'em they turned the water a lovely shade of blue and red...it was pretty cool.

Sam got a new badge for beads

Ruth got tuckered out and enjoyed a nice rest in the soft grass

MJ wanted to eat all the grass and got picked up shortly after this image was taken

In daddy's arms and paying mommy no mind
